Santa Fe French Toast
Santa Fe French Toast

Portions: 4    Serving size: 2 pieces (equal to 1 slice bread)


4 slices white bread, 3/4″ thick
4 eggs or 1 cup egg substitute
1-1/4 cup nondairy creamer
2 tablespoons canola oil



Preheat oven to 400º F.

Trim crust and cut bread in half diagonally.

Beat egg slightly and add to nondairy creamer.

Pour oil into a skillet and heat.

Dip bread into egg mixture. Fry in oil until brown on both sides.

Place browned toast pieces on a hot, baking sheet. Cook for 4 minutes in the oven to puff the toast.

Remove from oven and drain on paper towel if needed. Serve immediately with powdered sugar, syrup or jelly.
