Hawaiian Chicken Salad Sandwich

Portions: 4 Serving size: 1 Cup Chicken Salad, 1 Piece Flatbread or Tortilla

Ingredients

2 cups chicken, cooked and diced
1 cup pineapple tidbits, drained
1/2 cup low-fat mayonnaise or salad dressing
1/2 cup green pepper, chopped
1/3 cup carrots, shredded
1/2 teaspoon pepper
4 pieces flatbread or 6-inch flour tortillas

Preparation

  1. Combine all ingredients in a bowl.
  2. Refrigerate until chilled.
  3. Serve chicken salad wrapped in flatbread or a flour tortilla.

Helpful hints

  • Adjust portion for a lower or higher protein diet.
  • Serve on top of mixed salad greens, instead of bread, if desired.
