Chorizo and Egg Tortilla

Portions: 1    Serving size: 1/3 cup meat with one egg


1/3 cup Chorizo from Easy Chorizo recipe on DaVita.com
1 egg or 1/4-cup low-cholesterol egg product
one 6” flour tortilla



Cook 1/3-cup portion Easy Chorizo in a skillet on stove top, chopping meat into fine crumbles with a spatula.

Drain excess fat and water, if needed. Once meat is thoroughly cooked,  add 1 egg or 1/4-cup cholesterol-free egg product, stirring to combine  as eggs are cooking.

Serve in a flour tortilla.
